For those living with Celiac Disease, Gluten free diet is non-negotiable. Celiac Disease is an autoimmune condition which affects nearly 3.3 million people in the US alone each year. In this condition, the digestive system is unable to digest gluten, which is found in wheat, barley and rye, as well as other food items. 

 If you live with Celiac, you’re most likely all too aware about the struggles that come with adopting a gluten free diet! Limited options, ‘hidden’ gluten (which could mean days of agony), only salads as gluten free ‘options’ at cafes... the list could go on and on! Not to mention the obvious downside that cutting out gluten entails - feeling drained and exhausted. 

 Recognizing this difficulty, we have put together a list comprising of nutritious, wholesome foods which are completely gluten free and have amazing health benefits.

Did you know that each color in vegetables and fruits owes its presence to specific phytonutrients – natural chemicals that are known to play a key role in protecting plants from germs, insects, harmful sunlight and other such external factors? In fact, each color corresponds to a specific set of nutrients, which are incredibly beneficial for you. We can’t eat the rainbow but thank nature for rainbow hued veggies, right!
 1. Romaine lettuce is an excellent source of vitamin A (in the form of carotenoids), vitamin K, folate, and molybdenum.
2. Spinach is loaded with health-promoting phytonutrients such as carotenoids and flavonoids to provide you with powerful antioxidant protection.
3. Garlic has stupendous antibacterial, antiviral, and anti-cancerous properties and is a potent antioxidant.  It boasts of decent amounts of Manganese, Selenium, Sulfur, Vitamin C, B6, B1, Calcium and Iron.
4. Onions are rich sources of antioxidants and phytonutrients, as well as Vitamin C, B9, B6, potassium, and fiber. Their antibacterial properties make them a must have item in your kitchen.
5. Tomatoesare rich in lycopene, which is a powerful antioxidant, and contain liberal amounts of fiber. Other beneficial nutrients and minerals include vitamin A, C & K, vitamin B, folate, thiamine, potassium, manganese, magnesium, phosphorous, and copper.
6. Beets. Both the roots and the greens are incredibly nutritious. Beet greens, the leafy tops of beets, are the richest food source of betaine which helps your body in detoxification processes.

According to a 2009 report(based on data from the National Health and Nutrition Examination Surveys),8 out of 10 people in the US are falling short in virtually every color category of phytonutrients. Considering this alarming data, we recommend including these vegetables in diet.

The food that went into an animal’s system before its meat made its way into your stomach has an important role to play in your body’s reaction to it. Animals raised on a pasture, where they eat mostly grass, or worms/insects in the case of poultry, and a diet entirely FREE of antibiotics is the healthiest option. It is nutrient-rich, has minimum toxins AND packs all the advantages of wholesome protein. Incorporating adequate amount of such meat and/or wild-caught oily fish such as salmon and mackerel will ensure an optimum level of healthy protein and fat.
Tip – Look for terms like ‘Pastured’, ‘Pasture raised’, ‘Raised without Antibiotics’ and ‘Grass-fed and finished’ the next time you buy meat.

The spices listed here have incredible antioxidative properties which can potentially ward off a host of health problems caused by oxidative stress, while also making the food more flavorful. Oxidative stress is one of the underlying mechanisms behind almost all major diseases and the aging process itself. Even if you’re a healthy individual, consuming antioxidant rich food is important to maintain your health and decelerate aging.
1. Turmeric is a powerful blood purifier, supports liver function, is a rich source of antioxidants and is anti-inflammatory.
2. Ginger has incredible anti-inflammatory properties, is useful in maintaining blood sugarlevels, aids digestion and is antibacterial.
3. Fennel brings relief from several imbalances such as anemia, indigestion, flatulence, constipation, diarrhea, respiratory disorders and boosts immunity. It is also a great source of protein, dietary fiber, vitamin B and minerals such as Calcium, Iron, Magnesium and Manganese. Its characteristic sweet aroma and flavor can instantly take your food up by a couple notches!

Every coin has two sides, good and bad. So does fat, the oft demonized food component which is a vital requirement on several counts. The healthy fats that promote beneficial mechanisms in your body include-
1. Ghee. Ghee or Clarified Butter does not contain any lactose or casein. It means good news for people who have food sensitivities or suffer from lactose intolerance. Ghee also helps with building vitality. Often people with chronic diseases complain of fatigue and feeling depleted which can be addressed by consuming more ghee.
2. Coconut Oil helps in reducing hunger and boosts metabolism. Coconut oil seems especially helpful at reducing belly fat and cholesterol. It is a natural antimicrobial, helping to inhibit the growth of harmful bacteria, viruses, and fungi.
Other good fats include extra-virgin olive oil, avocados, oil from fish, pastured eggs, unheated nut oils, nuts, and seeds.

No, you’re not reading it by mistake. Chocolate is good for you on several counts!
Dark chocolate contains magnesium and zinc and is a rich source of polyphenols, which are beneficial for cardiovascular health and antioxidant status. It also has significant benefits in managing blood pressure and maintaining optimum cholesterol levels. Consuming a small amount daily is the key here though, so careful with the binge!

P.S. – Dark chocolate with no less than 70% cocoa is recommended. Beware of the high sugar content of the milder varieties.
